REAL Cookie Popper Truffles

Ingredients
- 3 bags Peanut Butter Cookie Poppers
- 1 8 oz. container plant based cream cheese (we like violife)
- 2 Tablespoons natural peanut butter
- 1 teaspoon vanilla extract
- 2 cups chocolate chips melted
- Reserve 1 -2 cookies to crush for decoration
Instructions
- Place all cookies in food processor with cream cheese, peanut butter and vanilla extract
- Line baking sheet with parchment paper.
- With small cookie scoop make into balls and place on cookie sheet. Place in freezer for about 30 minutes.
- Take frozen rounds and dip in melted chocolate and place back on cookie sheet
- Sprinkle tops with favorite sprinkles or crushed cookie crumbs
- Place back in refrigerator for 30 minutes.
