REAL Frozen “Cookies & Creme” Pie – V, DF, GF

Ingredients

For the Crust

  • 2 bags REAL Cookies & Creme Cookie Poppers
  • ½ block plant butter (1/2 cup)
  • 2 tablespoons maple syrup

For the Filling

  • 1 bag REAL Cookies & Creme Cookie Poppers – chopped coaresely
  • 2 – 8oz. packages vegan cream cheese (we like Violife)
  • 1 cup plant based heavy whip (we like Califia)
  • 1 cup organic powdered sugar
  • 2 tsp vanilla extract

For the topping

  • Crushed REAL Cookies & Cream Cookie Poppers for sprinkling

Equipment

  • 8 inch spring form baking tin
  • Blender, Vitamix or food processor

Instructions

Step 1

  • First make the base (and reserve crushed cookies for decorating the top of pie).
  • Place 2 – 3  bags of REAL Cookie Poppers (depending on how think a crust you like) in a food processor or Vitamix style blender.  Blitz, but do not over mix.
  • Put aside a small amount of the crushed cookies to sprinkle on the top of pie.
  • Melt butter
  • In a bowl, mix rest of the crushed cookies with the maple syrup and melted butter.
  • Press half of the cookie mixture onto the bottom of the springform tin you will use to make the pie.
  • Place in the refrigerator to chill while you make the filling.  Keep other half of cookie mixture in bowl and set aside.

Step 2

  • To make the filling, using an electric mixer, combine the dairy free cream cheese, organic powdered sugar and vanilla extract on medium speed until it is well integrated.  About 1 ½ minutes.
  • Coarsely cut with a knife about ½ bag of Cookie Poppers (about 1 cup)
  • Fold coarsely chopped cookies into the mixture.

 

Step 3

  • Spread about half of the filling mixture over the cookie base making it as level as possible.
  • Take leftover cookie base mixture and crumble over the filling until base layer is covered.
  • Use leftover filling and create the new layer of pie.

Step 4

  • Sprinkle reserved cookie crumbs over the top of the pie for decoration

Step 5

  • Cover pie and place in freezer overnight to set
  • Take out 20 minutes before serving to thaw slightly.  Can keep any leftovers in the refrigerator or freezer.
