REAL Cookies & Creme Cheescake Bites – V, DF, GF, GF

Ingredients

  • 3 bags REAL Cookies & Creme Cookies Poppers
  • 6 oz, dairy-free cream cheese ( we like Violife)
  • ½ cup crushed cookies reserved for rolling the bites

Equipment:

  • Vitamix or food processor

Instructions

Step 1

  • In a Vitamix or food processor, blend the cookies into fine crumbs. (reserve ½ cup of crumbs for rolling the truffles)
  • Add the room temperature cream cheese and mix until smooth

Step 2

  • Form balls using a small ice cream scoop or a tablespoon and roll into balls with your hands.
  • Place balls on a piece of parchment paper on a tray or plate

Step 3

  • Roll balls in the crushed cookies until coated. Place on parchment paper
  • When finished, refrigerate the bites for about an hour.
  • Enjoy!

Alternative

  • Dip chilled balls in melted chocolate instead of rolling in cookie crumbs.
  • Melt chocolate in microwave stirring every 15-30 seconds – or melt chocolate in double boiler.
  • Dip chilled balls in melted chocolate, let excess chocolate drip off and place back on parchment paper. Dust with cookie crumbs.
