Quick and REAL Cookies & Creme Cake with Frosting – DF, GF

Ingredients

  • 1 bag REAL Cookies & Creme Cookies Poppers (chopped)
  • 1 box gluten free classic yellow cake mix
  • 2 tablespoons vegetable oil
  • ½ cup (8 tablespoons) vegan plant butter (we like Violife)
  • 4 large eggs (room temperature)
  • 2/3 cup plant milk of your choice (almond milk)

Equipment:

  • Vitamix and electric mixer

Instructions

Step 1

  • Chop coarsely 1 bag REAL Cookies & Creme Cookie poppers

Step 2

  • Prepare cake following recipe from box

Step 3

  • Fold in the 1 bag chopped Real Cookies and Creme Cookie Poppers into batter from cake mix and pour batter into prepared baking pans
  • Bake according to recipe on box.
  • Allow baked cakes to cool before icing.

Cookies and Creme Frosting

  • 1 bag REAL
  • Cookies & Creme Cookies Poppers (chopped)
  • ½ Cup Palm Shortening
  • ½ Cup Violife Plant Butter
  • 5 Cups Sifted Confection Sugar (we prefer Wholesome Brand)
  • ½ cup Almond Milk (we prefer unsweetened MALK) or until you reach desired thickness
  • 2 teaspoons Vanilla Extract

Prepration

  • In electric mixer, combine palm shortening and plant butter. Whip for about 2 minutes until color gets very light.
  • Add sifted confection sugar and vanilla extract
  • Add plant milk as needed to bring icing to desired consistency.
  • Fold in 1 bag of the chopped cookies.
  • Ice cake.
  • Enjoy!
